This is so good. I have really similar recipe, and make in a springform pan. Have also made it with apples.

Love Rhubarb, Cake & Cinnamon but can't find it near me anymore😓 any substitutions? Apricots?

Ah, shame. You could try it with apricots but it might be too wet as there’s a lot of fruit in this cake. If they were firm and a little underripe it could work. Raspberries could be good, but fold them in gently as they are so fragile. Later in summer: plums!

Thanks!!! I scoured the supermarkets and finally found rhubarb yayyyy!!! Will try with under ripe apricots/cherries. And plums.

Oh my word - such a serendipitous arrival in my inbox, Karen. Older son is due home for one night only this week, and he's a joy to cook for, being: 1/ a foodie (and good cook himself), 2/ a student, so not always able to indulge his foodie tendencies, 3/ a fan of cakes and bakes of all kinds, and 4/ hugely appreciative when cooked and baked for. I hadn't decided on pudding yet. I have now. Rhubarb cake and greek yogurt, yay!
